Ingredients:
For the Steak:
- 2 ribeye or sirloin steaks (about 1 inch thick)
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 2 cloves garlic, smashed
- Salt and black pepper, to taste
- 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
For the Garlic Cream Sauce:
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- ½ cup heavy cream
- ½ cup beef broth
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional, for a slight kick)
- ⅓ cup grated Parmesan cheese
- 1 teaspoon fresh parsley, chopped (for garnish)
Directions:
- Prepare the Steak:
- Take the steaks out of the refrigerator 30 minutes before cooking to let them reach room temperature.
- Pat them dry with a paper towel and season generously with salt and black pepper on both sides.
- Sear the Steak:
- Heat a large skillet over medium-high heat. Add the olive oil and 1 tablespoon of butter.
- Once the butter is melted and sizzling, add the steaks. Cook for 3-4 minutes per side for medium-rare or longer for desired doneness.
- During the last minute of cooking, add the smashed garlic cloves and thyme to the pan. Tilt the pan slightly and spoon the melted butter over the steaks for extra flavor.
- Remove the steaks from the skillet and let them rest on a plate while you prepare the sauce.
- Make the Garlic Cream Sauce:
- In the same skillet, reduce the heat to medium and add 1 tablespoon of butter.
- Add the minced garlic and sauté for 30 seconds until fragrant.
- Pour in the beef broth and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
- Stir in the heavy cream, salt, black pepper, and red pepper flakes. Let it simmer for 2-3 minutes until slightly thickened.
- Add the Parmesan cheese and stir until fully melted and the sauce becomes creamy.
- Serve:
- Place the rested steaks on a plate and pour the garlic cream sauce over them.
